HeatKeeper® Refractory Brick
The Heat Keeper® brick, produced at the Alfa plant in Italy, absorbs and stores heat much better than the lava stone or ceramic used in other pizza ovens.
The Heat Keeper® refractory brick is crucial for quickly cooking a pizza, making it soft and crispy at the right point without burning it.

DoubleDown Ceramic Superwool® Insulation
The space between the stainless steel walls of an Alfa home oven is filled with DoubleDown Ceramic Superwool® insulation.
This European ceramic fibre offers twice the heat resistance of rock wool used by other pizza oven manufacturers. It also retains heat better and allows pizzas to cook to perfection.

Patented Full Effect Full Circulation Flue System®
This particular system optimizes the circulation of hot air inside Alfa ovens.
Rather than being evacuated quickly through the flue, as takes place in other pizza ovens, the hot air circulates in the cooking chamber and is pushed down to further heat the refractory brick and pizza.
In Alfa ovens, the heat is pushed in an “around and down” and then conveyed by a special deflector to the flue to be expelled.
In doing so, the oven always maintains the right temperature so as to optimally cook both the base and the condiments of your pizza.

An oven that generates particularly high heat levels must then be capable of withstanding high temperatures.
This is why the combustion chamber of an Alfa pizza oven is built with two different types of steel that have high thermal resistance.
The inner wall is made of 441 stainless steel with titanium to withstand thermal stress.
While the outer wall takes advantage of a stainless steel alloy with a low iron content to ensure greater resistance to heat, corrosion and weathering.
The result is a solid and robust pizza oven that retains the heat inside the cooking chamber.

Sidefire Gas Burner
For added safety and heat optimization
All Alfa gas ovens are equipped with the Sidefire system which means the Alfa burner is on the side of the oven.
Thanks to Alfa’s Sidefire system, the heat is blown across the oven to circulate up and around the combustion chamber. Other brands place their burners in the back of the oven. This means the heat is blown out the door which is, obviously, very inefficient.
The Sidefire system makes for better thermal efficiency, higher cooking performance and lower consumption.
OptiDome semi-sphere design
To cook pizzas perfectly, by optimizing the heat
The unique shape of an Alfa pizza oven is an integral part of its performance.
The OptiDome semi-sphere design is the result of skilful planning developed by the Alfa R&D team after conducting numerous tests which have shown that this particular shape is capable of maximizing circulation and heat flow inside the cooking chamber.
This allows Alfa ovens to heat up quickly and maintain constant temperatures in order to achieve uniform cooking.
