- Oven temperature: 250 °C
- Cooking time: 45 minutes
Ingredients
- extra virgin olive oil
- cooking salt
- garlic
- cherry tomatoes
- salmon
- parsley
Precedure
- we preheat the Duetto wood fired oven
- we pour a base of salt on the bottom of the tray
- we fill the fish with cherry tomatoes, parsley, garlic, olive oil and salt
- we completely cover the salmon with the rest of the salt
- we wet it with water so as to compact better the salt
- if you prefer further compacting the covering, mix the cooking salt with egg yolks
- we bake on the refractory brick at 250 °C for almost 40 minutes
- we recommend to season the salmon with a good french dressing
